The Gashouse is somewhat of an icon in Edwards: The building has been around since the 1940s but sat empty from the late 1960s until 1982, when the restaurant’s current owners got the idea to convert the building into a log cabin diner. Since 1983, the restaurant has embodied the realization of that dream. The Gashouse serves up a huge menu of rustic American fare such as wild game and hand-cut and aged Colorado beef, all of which can be paired with libations from the full bar. The restaurant features a family-friendly atmosphere that celebrates the rustic spirit of the Colorado mountains.
